500 grams Beef brisket (ready to cook)
2 Star anise
3 cloves
½ Cinnamon stick
3 Tbsps Fish sauce
salt
1 Tbsp soy sauce
Lime juice

2 sprigs parsley
2 sprigs Thai basil
1 sprig mint
200 grams Wide rice noodle
1 handful soybean sprout

Preparation steps

For the soup, halve the onion and brown in a large pan with the cut side down. Peel the ginger, slice and add to the pot. Rinse the bone and the meat, pat dry and add to the pot. Pour in 1.5 liters (approximately 6 cups) of water to so that the meat is covered. Bring to a boil, reduce the heat and simmer for about 2 hours. Skim any foam that develops and discard. Add the spices and fish sauce and season with salt after about 1 hour. Remove the bone and meat from the broth and let cool.

Rinse and trim the scallions and cut into thin rings. Rinse the chile, cut in half, remove the seeds and ribs, and dice finely. Rinse the herbs, shake dry and remove the leaves. Cut the meat into thin slices. Cook the pasta according to package directions and drain.

Strain the broth and season with soy sauce and lime juice. Divide the noodles, cooked meat, scallions, bean sprouts and chile among soup bowls, pour in the hot broth and serve sprinkled with herbs and sprouts.
