8 Spring roll dough sheet (frozen or fresh)
2 scallions (cleaned and finely chopped)
2 cloves garlic cloves (peeled and minced)
1 tsp fresh Lemon peel (grated)
1 small Red pepper (rinsed; seeded and finely chopped)
¼ cup shredded White cabbage (blanched and drained)
2 Tbsps soybean oil
salt (to taste)
freshly ground Black pepper
Peanut oil (for deep-frying)

sweet Chili sauce (for dipping)

Preparation steps

1.
If using frozen wrapper, lay the spring roll wrappers side by side to thaw while preparing the filling.
2.
Heat the soya oil in a wok and stir-fry the spring onions, garlic, and grated lemon peel. Add the peppers and stir-fry for about 2 minutes. Finally, add the cabbage and stir-fry briefly. Season to taste with salt and pepper.
3.
Place a little of the filling in the center of each spring roll wrapper and fold one corner of the wrapper over it. Fold in the two sides and roll up. Heat the peanut oil to 350ºF / 180°C. Working in batches if necessary, deep-fry the rolls for 2 to 4 minutes, until golden. Garnish with fresh cilantro and serve with sweet chilli dipping sauce.
