1 ¼ cups all-purpose flour
½ tsp Baking powder
cup milk
2 large eggs (beaten)
14 ozs canned Sweet corn (drained)
3 scallions (finely chopped)
1 red chili pepper (seeds removed, finely chopped)
2 Tbsps chopped cilantro
salt
peppers
4 Tbsps sunflower oil
To garnish
Lime wedge

Preparation steps

1.
Sift the flour and baking powder into a mixing bowl. Make a well in the centre and add the milk and eggs.
2.
Beat to a smooth, thick batter. Add the sweetcorn, spring onions, chilli and coriander and season with salt and pepper to taste. Mix well.
3.
Heat the oil in a frying pan. Drop large spoonfuls of batter into the pan, about 4 at a time and cook over a medium heat for 2-3 minutes on each side, until golden and firm.
4.
Remove from the pan and drain on absorbent kitchen paper. Keep warm while cooking the rest of the fritters.
5.
Serve garnished with lime wedges and a dipping sauce.
