Elderflowers are commonly known as a medicinal plant that can help treat many ailments. It helps with sicknesses like the common cold as well as other, more serious conditions like diabetes. While these gelatine cups have a lot of sugar in them, they are lower in carbs and fat.
You can make these in whatever shapes you have available, or you could make them as one, big pie and serve it in slices.

- 1.333 cups Elderflower liqueur
- 3 ½ cups water
- 1.333 cups strawberry Cordial
- 12 leaves gelatin
- 2 tsps lemon juice
- 4 ozs Strawberries (sliced)
- 4 ozs Gooseberry

Preparation steps
1.
Mix the elderflower cordial with half the water in a jug and the strawberry cordial with the remaining water.
2.
Soak 6 leaves of gelatine in 2 separate small bowls for 5 minutes in just enough cold water to cover.
3.
Warm 100ml|1/2 cup of the cordial mixtures in 2 separate pans until hot but not boiling. Remove from the heat.
4.
Squeeze out any excess water from the gelatine. Stir 1 portion of gelatine into the warm elderflower cordial until fully dissolved. Repeat with the strawberry cordial.
5.
Add the remaining cordial mixtures to both and1 teaspoon of lemon juice to each and stir well.
6.
Divide the fruit among small glasses or jelly moulds and pour in the cordial mixes. Chill overnight.
