- 1 ripe Avocado (peeled; pitted and diced)
- 1 ripe Tomato (rinsed; trimmed and diced)
- 2 Tbsps diced Red onions (optional)
- 2 tsps olive oil
- 2 tsps white balsamic vinegar
- 1 fresh Lime (quartered)
- 2 carrots (peeled; trimmed and cut into sticks)
- 2 ribs Celery (rinsed; trimmed and cut into sticks)
- 1 handful Watercress (divided)
Preparation steps

In a small bowl, combine avocado, tomatoes, onions, olive oil, and balsamic vinegar; toss to coat.

Let stand for 5 minutes before dividing between bowls. Drizzle avocado and tomato salad with with lime juice. Garnish with carrots, celery and watercress. Serve with your favorite healthy dressing or drizzle with lime juice.
