- For the carrot hummus
- 2 cups canned chickpeas (drained)
- 2 Tbsps lemon juice
- 1 Tbsp Tahini
- ¾ cup carrots (grated)
- ground Cumin
- For the wraps
- 4 medium chicken escalope (trimmed)
- 1 Tbsp olive oil
- 1 tsp mixed dried Herbs
- 4 flour Tortillas
- 2 cups Arugula ((or other leafy green lettuce)
- salt
- freshly ground Black pepper
Preparation steps

For the hummus: Combine the chickpeas, lemon juice, tahini, carrot, cumin, seasoning, and a couple of tablespoons of hot water in a food processor. Blend until the hummus comes together, scraping down the sides if needed. Cover and chill until needed.

For the wraps: Preheat the grill to hot. Rub the chicken escalopes with oil and season with mixed dried herbs, salt, and pepper.

Spread out on a grilling tray and grill for 12 - 14 minutes, turning occasionally, until golden and cooked through.

Remove from the grill and leave to rest briefly.
5.
Line the wraps with the rocket or lettuce. Roll up and secure with toothpicks. Serve with the carrot hummus on the side.
