- 16 Pearl onion
- 1 Tbsp butter
- 30 grams Walnut
- 50 grams Arugula
- 50 grams Red Chard leaf
- 16 Red Grape
- 2 Tbsps White vinegar
- 1 Tbsp Fig mustard (or Dijon mustard)
- 50 milliliters olive oil
- 2 Pear
- 6 slices Foie gras
Preparation steps
1.
Peel onions and cut in half. Melt butter in a pan and sauté onions until lightly browned. Remove onions from pan. Toast walnuts in the hot pan.

Rinse arugula and chard and spin dry. Rinse grapes and cut in half. Whisk together vinegar, mustard and olive oil to form a dressing. Peel pears, cut in half, remove seeds and cut into slices. Cut foie gras slices in half.
3.
Arrange arugula and chard on plates. Top with onions, grapes, pears, walnuts and foie gras. Drizzle with dressing and serve.
