With the bacon, potatoes, and vegtables, this meal is full of protein, carbs, healthy fats, and nutrients, keeping you full for a long time and energrized throughout your day. 

For breakfast and added protein, add an egg on the top. During the fall, you can substitute potatoes for sweet potatoes.

5.333 cups waxy potatoes
cup Bacon (cut into wide strips)
5 Tbsps white wine vinegar
1 tsp hot Mustard
1 tsp honey
5 Tbsps olive oil
1 cup cherry Tomatoes (halved)
1 ½ cups Arugula (chopped)

Preparation steps

1.
Steam the potatoes for around 30 min until tender. Leave to cool and then cut into bite-sized pieces.
2.
Fry the bacon in a pan and pat dry with kitchen paper.
3.
To make the dressing, mix together the vinegar, mustard, honey, 1-2 tbsp water and the oil. Season with salt and ground black pepper.
4.
Mix all the ingredients with the dressing and serve in bowls.
