300 milliliters Chicken broth
200 milliliters dry white wine
1 sprig thyme
1 sprig rosemary
1 roasting chicken
5 thin slices Bacon

Preparation steps

1.

Preheat the oven to 200°C (approximately 400°F).

Peel the onions and cut into large pieces. Peel the carrots, parsnips and celery root and cut into large pieces. Peel the garlic and coarsely chop. Rinse and peel the potatoes.

Place all vegetables in a roasting pan, season with salt and pepper and sprinkle with broth and wine. Rinse the herbs and add to the pan.

Rinse the chicken, pat dry and season with salt and pepper. Top with slices of bacon. Place the chicken on the vegetables and roast in preheated oven about 45 minutes to 1 hour, depending on size of chicken.

5.

Occasionally baste with the meat juices.

6.

To serve, place the chicken with vegetables on a warmed plate.
