4 Steak fillet (about 200 grams or approximately 7 oz each)
4 slices Bacon
salt (and)

1 Tbsp clarified butter
150 milliliters dry white wine
1 Tbsp pickled green peppers (or green peppercorns)
500 grams green Beans
1 kilogram starchy potatoes
125 milliliters milk
75 grams Whipped cream
40 grams butter
Nutmeg
2 Tbsps chopped parsley

Preparation steps

1.

Wrap bacon slices around the edge of each fillet steak and secure with kitchen string.

Peel the potatoes, rinse and cook in boiling salted water for about 25 minutes. Drain and press through a ricer or mash while still hot and mix with milk, cream, and butter. Season with salt, pepper and nutmeg, and stir in the parsley.

Rinse the beans and cook in boiling salted water for about 10 minutes, then drain.

Cook the steaks in a pan with butter on each side over high heat for 1 minute. Reduce the heat and cook for another 2-4 minutes (depending on doneness preference). Season with salt and pepper, remove, wrap with aluminum foil and keep warm in the oven at 80°C (approximately 175°F). Pour the fat out of the pan, raise the temperature and deglaze with wine. Add the green pepper, boil down slightly and season with salt.

Serve steaks the with mashed potatoes and beans on plates and drizzle each with the pepper and wine sauce.
