1 duck leg (300 grams)
salt
freshly ground peppers
2 Tbsps Orange juice
2 tsps soy sauce
1 garlic clove (finely chopped)
1 Tbsp olive oil
2 Tbsps Apricot jam
1 tsp balsamic vinegar
cayenne pepper
1 pc Baguette (200 grams)
2 Lettuce
Orange zest (for garnish)

Preparation steps

1.

Carve duck breast on the skin side into a diamond pattern and season both sides with salt and pepper. Mix orange juice in a bowl with 1 teaspoon soy sauce, garlic and oil. Brush duck breast with orange juice mixture.

Cook duck breast skin-side down in a small ovenproof frying pan for about 5 minutes, and then turn over and cook in a preheated 200°C (approximately 400°F) oven for about 10-12 minutes.

Mix apricot jam in a bowl with remaining soy sauce and balsamic vinegar, stir and season with salt and cayenne pepper.

4.

Cut baguette in half lengthwise. Spread half of apricot sauce on the bottom half of baguette and cover with lettuce. Cut duck breast into thin slices, spread it over lettuce and sprinkle with remaining apricot sauce. Serve if desired garnished with orange zest.
