Preparation steps

1.

Preheat the oven to 60°C (approximately 150°F). Rinse the apples and core. Peel 4 of the apples, dice and mix with 20 ml (approximately 1 1/2 tablespoons) of lemon juice.

Cut the remaining apples into thin slices, and brush them well with 20 ml (approximately 1 1/2 tablespoons)of lemon juice. Spread the slices on an oven rack and allow to dry in the oven for about 1 hour while keeping the oven door slightly open.

Meanwhile, bring the sugar, remaining lemon juice and cinnamon sticks to a boil. Add the diced apples and simmer for 5-6 minutes on low heat. Allow the mixture to cool.

4.

Alternating between the apple slices and the diced apples, arrange into small towers. Drizzle with the remaining sugar syrup, garnish with mint leaves and the cinnamon sticks and serve.
