Baked Apples with Vanilla Sauce

This dessert is relatively low in fat but a good source of fiber from the apples.
Make sure to use sweet apples like honeycrisp as upposed to sour apples like granny smith.
Ingredients
- For Apples:
- 2 Tbsps Hazelnuts
- 8 Date (finely chopped)
- 1 Tbsp Hemp seeds
- ½ tsp cinnamon
- 3 Tbsps Oats
- 1 Orange
- 4 large Apple
- Vanilla Sauce:
- 2 cups milk (divided)
- 1 tsp Vanilla
- Turmeric
- 5 Tbsps Agave syrup (or xylitol)
- Topping:
- Hemp seeds
- Hazelnuts (chopped )
Preparation steps
Preheat oven to 350°F.
Chop the hazelnuts and dates and set aside. Peel the orange. Squeeze the juice into a bowl and set aside. Chop the orange pulp and put in a small bowl along with oats, hazelnuts, dates, hemp seeds, and cinnamon.
Wash and dry apples. Cut off the top piece and save it (see photo) Carefully hollow out the inside of the apple, discard the seeds and chop the inside into very small dice. Mix apple pieces into oat filling.
Place the apples side by side in a glass baking dish. Fill them with the oat mixture and place the apple lid back on top of each.
Pour the reserved orange juice over the filled apples. Bake for about 25-30 minutes. Spoon the orange juice out of the baking dish every 10 minutes.
While the apples are baking, add 13 ounces of milk with vanilla extract and sweetener in a small pot and bring to a boil. Mix the remaining 3 ounces of cold milk with potato starch and turmeric, and pour the starchy mixture into the boiling milk, blend well and turn off the heat. Set aside.
Serve baked apples hot or cold, drizzle with vanilla sauce, and sprinkle with toppings
