200 grams Pancetta

4 sprigs Sage
2 dried Peperoncini
1 pc Organic lemon zest
½ Kid (goat) (about 4 kg (with bone, divided by the butcher into 4 pieces)

125 milliliters white wine

Preparation steps

Peel the garlic cloves, finely chop, and cut the pancetta into very small cubes. Rinse the herbs, shake dry, pluck the leaves from the stems and finely chop. Rinse the peperoncino and lemon peel and also chop finely. Mix everything together and add the oil.

Rinse the goat pieces, pat dry, rub with salt and pepper and place in the drip pan of the oven. Cover all parts of the goat meat evenly with the mixture. Pour the wine into the roasting pan and add 1/2 cup of water. Bake in preheated oven at 140°C (approximately 275°F) for about 1 hour and 30 minutes. Check every 20 minutes carefully.

Pour in some water before all of the liquid has evaporated.

Turn off the oven and leave in the off oven for another 10 minutes. Place the meat on a wooden board and serve garnished with herbs.
