Preparation steps

Preheat the oven to 220°C (approximately 425°F). Place the cheese on a baking sheet lined with parchment paper. Rinse the cherry tomatoes, cut in half and place, cut-side down, onto the baking sheet. Drizzle the tomatoes with honey. Brush the baguette slices with olive oil and place on the baking sheet. Place in the oven and bake for about 5 minutes, until the bread is toasted, the tomatoes are caramelized and cheese begins to melt.

Season everything with freshly ground pepper and thyme. Serve warm, alongside dried apricots.
