Preparation steps

Peel potatoes, cut in half lengthwise and cut crosswise into wedges. Bring a large volume of salted water to a boil in a pot, add potatoes and macaroni and cook for about 10 minutes. Drain in a colander. Preheat oven to 180°C (approximately 350°F). Place macaroni and potatoes in a baking dish and season with salt and pepper.

Mix cream with the grated Emmentaler and Gruyère and pour mixture over the baking dish. Bake in the oven for 20 minutes. Peel the onions and cut into thin slices. Heat the clarified butter in a frying pan and fry the onions until golden brown.

Rinse apples, quarter, remove seeds and cut the unpeeled apples into slices. Heat butter in a saucepan and add apples, sugar and wine. Sauté for about 10 minutes. Remove baking dish from the oven, spread the onions over the baked macaroni and potatoes and serve with the apple compote.
