750 grams Ground meat (mixed)
2 shallots (finely chopped)
80 grams smoked Bacon (finely diced)
2 Tbsps clarified butter
2 day-old White rolls
750 milliliters milk
3 eggs
12 Cherry tomatoes

4 Tbsps butter
4 Tbsps Pastry flour
150 grams Gouda (grated)

Preparation steps

Soak the bread in lukewarm water.

Sautée the bacon in 1 tablespoon of butter, add shallot and let simmer until wilty. Stir in parsley, remove from heat and allow to cool slightly, then mix well with the ground beef, 1 egg, bread (squeezed so only moist and not dripping), salt and pepper and form 12 patties. Place a cherry tomato on each and wrap the patty around it to form a ball, and fry briefly in the remaining butter.

Melt butter in a saucepan, stir in flour, briefly fry, stir in milk with a whisk, add salt and pepper and let simmer for about 10 minutes, stirring occasionally. Remove from heat and let cool slightly. Stir in 100 grams (approximately 3 1/2 ounces) of grated cheese and 2 eggs.

Place the fried patties in a greased baking dish, pour the sauce over them and sprinkle with remaining cheese. Bake at 200°C (approximately 400°F) for about 30 minutes. Let cook until the sauce is lightly browned. Serve sprinkled with parsley.
