100 grams Crème fraiche
1 egg yolk
2 Tbsps grated Parmesan
2 Tbsps dry white wine
Sea salt
freshly ground peppers
12 Oyster
1 tsp pink Peppercorns
2 Tbsps finely cut parsley

Preparation steps

1.

Peel the shallot and finely chop. Stir in the crème fraîche, egg yolk, Parmesan and white wine and season with salt and pepper.

Preheat the oven to broil.

Open the oysters, clean and place on a baking sheet (as desired on a bed of salt for better grip). Dollop the cream on top, sprinkle with the pink pepper and bake au gratin 5-6 minutes in the oven.

4.

Serve garnished with parsley.
