250 grams Pastry flour
3 eggs
400 milliliters milk
salt
clarified butter (for baking.)
1 smaller Green cabbage (500 grams)
200 grams streaky Smoked bacon (in slices)
3 Tbsps Pumpkin seed (coarsely chopped)
200 grams Gruyere (grated)
200 grams Whipped cream
salt
freshly ground peppers
vegetable oil (for the pan)

Preparation steps

1.

Whisk together flour, milk, eggs and 1/2 teaspoon salt to form a batter. Allow to swell about 15 minutes, then bake about 6 pancakes in hot butter and let cool.

Brush cabbage, divide into leaves, cut out thick ribs to lie flat and blanch in boiling salted water for about 4 minutes. Drain, rinse in cold water and drain.

Cut the bacon into small strips and cook in a pan. Remove the bacon and roast the pumpkin seeds in fat.

Top each pancake with cabbage leaves, bacon, pumpkin seeds and some cheese. Roll and cut crosswise into about 4 cm (approximately 1 1/2 inches) wide rolls, then set upright in an oiled baking dish.

Mix remaining cheese with the cream, season with salt and pepper and pour over the rolls.

6.

Bake in a preheated oven (200°C, approximately 400°F) for about 30 minutes until golden brown. Serve.
