4 scallions

Preparation steps

Scrub potatoes, wrap in aluminum foil and bake in hot oven (200°C, approximately 400°F) for about 50 to 60 minutes. Rinse tomatoes, cut in half, remove seeds and cut into small cubes. Rinse and chop scallions.

Cut cooked potatoes lengthwise. Use a towel or oven mitt to hold potatoes. Spoon sour cream on top of potatoes. Mix tomatoes and scallions with olive oil and sprinkle on top. Season with salt and pepper to taste and serve immediately.
