Baked Potato with Spicy Chicken and Green Beans

- 2 large red potatoes
- 1 Chicken breast (about 300 grams)
- 1 egg
- 2 Tbsps Italian Fresh herbs (frozen)
- 2 Tbsps Parmesan (grated)
- Chili powder
- salt

- 200 grams green Beans (frozen)
- 1 Tbsp White vinegar
- 1 Tbsp grated Parmesan
- 4 Sage
Preparation steps
Scrub the potatoes and cook for about 30 minutes in salted water. Halve each potato and with a tablespoon, scoop out the center and mash the center. Separate the eggs. Mix the egg yolk with parmesan and herbs and season with chili, salt, and pepper. Mix with the potato. Beat the egg white to a firm meringue and fold into the egg yolk mixture.
Cut the chicken breast into cubes. Dip in the egg batter and place in a hot fryer. Before they are brown, take out of the fryer and place in the potato halves. Place the filled potatoes in the oven and bake for about 15 minutes at 120°C (approximately 250°F) Meanwhile, boil the green beans in salted water and mix with a little vinegar.
To serve: Arrange the green beans on plates and serve the potatoes garnished with sage and sprinkled with Parmesan.
