Scrub the potatoes well and pat dry. Wrap each individually in aluminum foil. Bake at 180°C (approximately 350°F) for about 35 minutes. Remove and let cool slightly. Cut off the top and level slightly. Hollow out the potatoes slightly.

Blanch the asparagus tips in boiling salted water for 6 minutes. Remove, quench with cold water and drain.

Cut the Gruyere into small cubes. Mix with the quark and potato mixture. Season with the herbs, salt and pepper. Stir in the asparagus tips. Fill everything in the potatoes and broil for 2-3 minutes, watching closely the entire time.
