1 Tbsp lemon juice

Preparation steps

Preheat the oven to 220°C (approximately 425°F). Scrub the potatoes thoroughly, pat dry and wrap in foil. Arrange on a baking sheet and bake for about 50 minutes. Whisk the crème fraîche and lemon juice until smooth and season with salt and pepper.

2.

Remove the potatoes from the oven and open the foil. Cut the potatoes crosswise, squeeze to open, top each with a dollop of crème fraîche and a quenelle of caviar.
