250 grams fresh Spinach
2 Tbsps olive oil
1 can diced Tomatoes (400 grams)
300 milliliters Vegetable broth
salt

1 Tbsp chopped oregano

Preparation steps

Rinse potatoes and cut into quarters. Peel two onions, cut one onion into small cubes and cut another one into slices. Peel garlic and chop finely. Rinse and spin dry spinach.

Heat oil in a saucepan and sauté cubed onion and garlic for about 2 minutes. Add spinach, tomatoes and vegetable broth; season with salt, pepper, nutmeg and oregano. Simmer for 10 minutes on medium heat.

Arrange potatoes and sliced onion in a greased baking dish, top with spinach and tomato sauce and bake in preheated oven at 200°C (approximately 400°F) for 20-25 minutes. Sprinkle with oregano and serve.
