Banana Leaf Chicken Packets
Ingredients

- 8 Banana leaf
- Twine
- For the filling
- 500 grams Chicken breasts
- 3 Tbsps light soy sauce
- 1 tsp sugar
- 1 pinch white peppers
- 300 grams Pumpkin
- 1 Parsnip
- 2 garlic cloves
- 1 Lemongrass
- 2 Tbsps sesame oil
Preparation steps
For the filling, brush chicken with vinegar and cut into bite-size pieces. In a bowl, mix soy sauce, sugar and white pepper and add chicken pieces. Set aside to marinate.
Rinse parsnip, drain and wipe dry and peel and finely chop. Peel garlic cloves and squeeze through a garlic press. Cut pumpkin flesh into small pieces. Trim lemongrass on both ends and peel outer layers and cut into small rings. In a wok, heat sesame oil and sauté chicken pieces, garlic, parsley, lemongrass and pumpkin pieces and season with salt and pepper. Warm banana leaves until they are flexible. Place banana leaves crosswise over each other. and place chicken mixture in the middle of banana leaves. Fold banana leaves over chicken mixture and tie packet with raffia twine. Bake for 15 minutes in preheated oven at 180°C (approximately 350°F). To serve, open parcels and arrange on warmed plates.
