250 milliliters Coconut milk (in a can)
80 milliliters mineral water (carbonated)
1 egg
1 salt
2 Tbsps sunflower oil

Preparation steps

Peel banana and cut into thin slices. Mix the flour with baking powder and mix with coconut milk, mineral water, egg and salt into a smooth batter. Add the banana slices and let the batter rest for 5 minutes.

Heat 1 teaspoon oil in a small nonstick pan approximately 18 cm (approximately 7 1/2 inches). Pour 1 small ladle batter into pan, cooking the pancakes over medium heat on each side 1-2 minutes. From the remaining oil and the remaining batter make 7 other thin pancakes. Keep finished pancakes warm in the oven (70°C, approximately 160°F) until serving.
