- For the chicken
- 4 Chicken legs
- olive oil
- salt
- peppers
- For the barbecue sauce
- 4 Tbsps white wine vinegar
- 3 Tbsps soy sauce
- 2 Tbsps tomato Ketchup
- 1 Tbsp soft brown sugar
- 2 tsps English mustard powder
- 1 tsp paprika
- dried Chili flakes
- salt
- peppers
- To serve
- 4 sweet Corn (peeled)
- 1 cup Green beans (trimmed)
- cooked white rice
Preparation steps

Preheat the oven to 200°C (180° fan) | 400F | gas 6

Mix together the sauce ingredients and simmer in a pan for 5 minutes, then coat the chicken legs thoroughly in the sauce.

Lay the legs in a foil-lined roasting tin and roast in the oven for about 40 minutes until golden and cooked through. If they look like they are burning, cover with foil.
4.
Meanwhile heat a griddle or barbecue until smoking and cook the sweetcorn, turning frequently until lightly charred and tender.
5.
Steam the green beans over simmering water for 4-5 minutes until crisp-tender.
6.
Serve the hot chicken with the rice, corn and beans and any sauce spooned over.
