350 grams dried small white Beans
100 grams shallots
2 garlic cloves
3 Tbsps vegetable oil
400 grams smoked Bacon (sliced)
1 bay leaf
1 sprig rosemary
2 sprigs marjoram (chopped)
1 tsp Lemon peel
200 grams Leeks (the whites)
200 milliliters Whipped cream

Preparation steps

1.

Soak beans overnight in plenty of cold water. The next day, cut leeks in half lengthwise, trim and cut into slices. Peel shallots and chop finely. Remove garlic and chop coarsely. Heat oil in a saucepan and sauté leeks, shallots and garlic until translucent. Add 1 1/2 liters (approximately 51 ounces) of water, drained beans, bay leaf, rosemary and lemon zest. Cook 1 1/2 hours partially covered over medium heat.

Remove bay leaf and rosemary. Puree everything with an immersion blender and season with cream, salt and pepper. Add a little water or broth if needed to reach desired consistency.

Cut bacon into strips and fry in a dry skillet until crispy.

To serve, pour soup into bowls and garnish with bacon and fresh, chopped marjoram leaves.

5.

Serve with bread if desired.
