- 250 grams day-old white bread
- 125 milliliters milk
- 1 shallot
- 100 grams Bacon
- 1 Tbsp butter
- 1 Tbsp freshly chopped parsley
- 1 Tbsp freshly chopped thyme
- 1 egg
- salt
- peppers (from the mill)
- breadcrumbs (upon need)
- 1 l Beef broth
- 2 Tbsps scallions
Preparation steps

Dice the bread and place in a bowl. Boil the milk and pour over the bread. Peel the shallot and cut into small cubes along with the bacon. Sauté together in butter briefly and mix together with the parsley, thyme and egg into the bread. Season with salt and pepper and add some white bread crumbs as needed to make a pliable mixture. Form about 12 small dumplings from the mixture. Carefully drop the dumplings into boiling salted water and simmer until done, 10-15 minutes on low heat.

Remove the dumplings from the water with a slotted spoon and transfer to shallow bowls. Add the hot broth and serve sprinkled with chives.
