- 35 ozs Beef (with the bones scraped clean)
- salt
- freshly ground peppers
- 1 tsp finely chopped rosemary
- 1 tsp finely chopped thyme
- 1 Tbsp medium-hot Mustard
- 1 Tbsp clarified butter
- 5 ½ cups waxy potatoes (peeled and halved)
- 2 cloves garlic cloves (chopped)
- 1 tsp rosemary
- pickled Caper (to serve)
Preparation steps

Preheat the oven to 120°C | 275F | gas 1. Rub the meat with salt and pepper.

Mix the rosemary and thyme with the mustard and spread on the meat. Heat the clarified butter and brown the meat on all sides.

Put into the preheated oven and cook for about 2 hours; it should still be pink inside.
4.
Mix the potatoes and garlic, season with salt and pepper and sprinkle with rosemary leaves. Put the potatoes around the meat in the roasting tin about 30 minutes before the end of cooking time.
5.
Allow the meat to rest for about 10 minutes before carving. Serve with pickled capers.
