- 1 ½ kilograms Shoulder fillet (of beef)
- salt
- freshly ground peppers
- 3 Tbsps vegetable oil
- 2 onions
- 2 garlic cloves
- 2 carrots
- 2 stalks Celery
- 1 handful Fresh herbs (Rosemary, sage and thyme)
- 1 tsp peppercorns (coarsely pounded)
Preparation steps

Preheat oven to 160°C (approximately 320°F.)

Rinse beef, pat dry and tie with kitchen twine. Rub salt and pepper and fry in 1-2 tablespoons hot oil in a roasting pan. Remove from pan.

Peel onion and garlic. Coarsely chop onions and press or halve garlic. Peel and rinse carrots and celery and cut into large pieces. Pour remaining oil into roasting pan and top with vegetables. Place beef on top and cover with herbs. Sprinkle with crushed peppercorns and cook in oven for about 1.5 hours. Pour water over meat from time to time as needed to make gravy.

Before serving, remove kitchen twine and let beef rest briefly. Season gravy and vegetables to taste and serve with sliced beef.
