Beef Soup with Star Fruit

- 2 Lemongrass
- 2 Limes
- 1 pc fresh ginger (about 2 cm; approximately 3/4 inch)
- 3001 cloves
- 4 Coriander
- 3 Lime leaves
- 800 milliliters Chicken broth
- 2 Tbsps light soy sauce
- salt
- brown sugar
- freshly ground peppers
- 4 scallions
- 350 grams Beef fillet
- 2 Tbsps vegetable oil
- 1 Star fruit
Preparation steps
Rinse the lemongrass, cut off the top, then cut the remainder into thin slices. Rinse the lime with hot water, halve it and slice one half; juice the other half. Peel the ginger and finely chop. Boil the ginger together with the clove, coriander seeds, lime leaves and chopped lemongrass in the chicken broth, then simmer for about 30 minutes. Strain the stock through a sieve lined with cheesecloth, then put in a fat seprator if necessary. Bring back to a boil, then add lime slices and season with soy sauce, 1-2 tablespoons lime juice, salt, sugar and pepper. Rinse the scallions and slice.
Rinse the beef, pat dry, and cut into thin strips. Fry 1-2 minutes in a pan with the hot oil. Just before serving, add the beef to the hot soup along with the scallions. Rinse the star fruit, cut into slices and use as a garnish.
