For the steaks
4 Rump steak (eah about 220 grams)
salt
freshly ground peppers
2 Tbsps clarified butter
For the potatoes
1 kilogram potatoes
200 milliliters milk
50 grams butter
salt
freshly ground peppers
Nutmeg

500 grams Snow peas
rosemary (for garnishing)

Preparation steps

1.

For the potatoes: peel potatoes, cut into small pieces and cook in salted water for about 20 minutes. Bring milk to a boil. Drain potatoes and mash with milk and butter. Season with salt, pepper and nutmeg.

For the steaks: season steaks with salt and pepper. Heat butter in a pan and cook steaks for about 1-2 minutes per side. Wrap in foil and bake in preheated oven at 80°C (approximately 175°F) for about 20-30 minutes.

Rinse snow peas and blanch in boiling salted water for about 4 minutes. Drain well. 

4.

Arrange steaks, potatoes and snow peas on plates and garnish with rosemary. Serve.
