- 2 Tbsps olive oil
- 3 ozs Bacon (chopped)
- 26 ozs stewing Beef (cubed)
- 3 Tbsps Tomato paste
- 2 cups Red wine
- 1 cup Beef stock
- 1 tsp chopped thyme
- 1 bay leaf
- salt
- peppers
- 1 Tbsp flour
- 2 Tbsps butter
- 14 ozs shallots
- 14 ozs button Mushrooms
- 12 ozs ribbon pasta
- To garnish
- thyme
Preparation steps
1.
Heat the oven to 150°C (130° fan) 300°F gas 2.

Heat the oil in a flameproof casserole and cook the bacon until browned. Add the meat in batches and brown quickly on all sides. Remove and set aside.

Stir the tomato paste into the pan, followed by the wine and stock. Add the bacon, meat, thyme and bay leaf. Season to taste with salt and pepper. Cover and cook in the oven for 1 hour.
4.
Knead the flour with the butter and stir into the casserole with the shallots. Cover and cook for a further hour.
5.
Add the mushrooms and cook for a further 30 minutes.
6.
Cook the noodles according to the pack instructions and serve with the Boeuf bourguignon. Garnish with a sprig of thyme
