1 handful flat-leaf parsley
1 handful Basil
12 scallions
350 grams Cherry tomatoes
4 slices French Farmhouse bread (thickly sliced ​)
3 Tbsps butter
salt
freshly ground peppers
2 Tbsps olive oil
8 slices Beef fillet (each around 90 grams) (approximately 3 ounces)
3 Tbsps Canola oil

Preparation steps

Rinse the herbs, shake dry and finely chop the leaves. Rinse the scallions, trim and cut into 2 cm (approximately 3/4 inch) sections. Rinse the tomatoes and cut in half.

For the coûtons: Cut the bread into small cubes. Melt 2 tablespoons butter in a frying pan and toast the bread cubes until crispy. Season with salt and pepper.

For the tomatoes and scallions: Melt the remaining butter and olive oil in the frying pan and sauté the tomatoes and scallions, tossing occasionally, for about 10 minutes. Season with salt and pepper then remove the pan from the heat.

For the meat: Rinse the beef, pat dry and season with salt and pepper. Heat the canola oil in a frying pan and sear the beef for 1-2 minutes per side, or until cooked to your liking. Add the tomatoes, scallions and herbs and toss to combine. Arrange on serving plates and sprinkle with croûtons.
