Preparation steps

1.
Wipe the apples well to remove any waxy coating - otherwise the toffee won't stick. Insert a clean stick into each stalk end.

Heat the sugar, water and food colouring in a pan over a low heat until melted. Bring to a boil and cook steadily until a little of the mixture forms a hard crack when dropped into chilled water; 150°C | 300°F on a sugar thermometer. Remove from the heat and leave to stand for 5 minutes.
3.
Dip the apples into the toffee, swirling them around until coated. Place on non-stick baking paper to set.
