½ cube fresh Yeast (approximately 10 grams)
500 milliliters milk
1 tsp honey
4 eggs
1 pinch salt
200 grams Buckwheat flour
1 handful Chives
250 grams Crème fraiche
salt
freshly ground peppers
½ Cucumber
clarified butter (for cooking)

Preparation steps

1.

Crumble the yeast and dissolve in the milk. Mix with honey, eggs and salt and gradually stir in the flour. Let the dough rest about 15 minutes.

In the meantime, rinse the chives, pat dry with paper towels and cut into small rolls. Stir in the crème fraîche and season with salt and pepper. Rinse the cucumber and cut into slices.

3.

Heat some butter in a pan and bake small blini from the dough. Repeat until batter is gone.

4.

To serve, distribute the blini on plates, cover with slices of cucumber and crown with the crème fraîche.
