1.333 cups Dried Fruit (e. g. apricots, plums, figs, chopped)
3 Tbsps Rum (or orange juice)
1 cup Walnut
2 cups all-purpose flour
1 cup hazelnut flour
2 tsps Baking powder
1 tsp Ginger powder
½ tsp ground cinnamon
½ tsp ground cloves

4 eggs
cup sugar
cup milk
powdered sugar

Preparation steps

1.
Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6 and grease and flour a loaf tin.
2.
Drizzle the fruit with the rum and dry roast the walnuts. Remove from the pan and chop.

Mix together the flour, ground hazelnuts, baking powder, a pinch of salt and the spices.
4.
Melt the butter in a saucepan over a low heat and leave to cool slightly.
5.
Beat the eggs and the sugar with an electric mixer until foamy. Stir in the milk and the butter. Add the dry ingredients and quickly mix to form a smooth batter. If the mixture is too firm, add a little more milk.
6.
Fold in the fruit and walnuts, transfer to the prepared baking tin and bake for 45-50 minutes; test with a wooden stick to see if it's done.
7.
Remove from the oven, leave to rest for 10 minutes and then remove from the tin and leave to cool on a wire rack. Serve dusted with icing sugar.
