1 ⅔ cups instant Couscous
4 shallots (diced)
1 green chili pepper (chopped)
3 Limes (juiced)
6 Tbsps sesame oil
1 ⅔ cups Papaya (diced)
3 Tbsps olive oil
24 raw Prawn (without heads, with shells)
4 garlic cloves (diced)
White pepper
1 handful cilantro (chopped)
1 Avocado (flesh scooped out and diced)
1 tsp black Sesame seeds

Preparation steps

Cover the couscous with warm water and allow to steep for around 15 minutes then drain. Mix with the shallots, chilli, the juice of one lime and the sesame seed oil and season with salt.
2.
Mix the papaya with the juice of one lime and heat the olive oil in a pan. Fry the prawns and the garlic for 2-3 minutes then remove from the pan and season with salt and ground white pepper.
3.
Stir the papaya, prawns, coriander, avocado and the remaining lime juice into the couscous and serve garnished with black sesame seeds.
