4 Tbsps olive oil
2 onions (chopped)
2 cloves garlic cloves (finely chopped)
2 Tbsps tomato puree
28 ozs canned Tomatoes
1 tsp sugar
18 ozs ground Beef
4 Tbsps breadcrumbs
1 small Bread roll (soaked in warm water)
1 egg (beaten)
3 Tbsps grated Parmesan
2 Tbsps mixed Italian herbs (finely chopped)
salt

14 ozs Spaghetti
To garnish
flat-leaf parsley

Preparation steps

1.
Heat half the oil in a pan and cook the onions and garlic until soft but not browned.
2.
Add the tomato puree and tomatoes and bring to a boil Reduce the heat and simmer for 30 minutes. Season to taste with salt, pepper and sugar.

Squeeze out the bread roll and mix with the meat, onions, garlic, breadcrumbs, egg, parmesan and herbs until combined. Season to taste with salt and pepper.
4.
With moistened hands, roll small balls of the mixture.
5.
Heat the remaining oil in a frying pan and brown the meatballs. Add the tomato sauce and cook for a further 15 minutes, until the meatballs are cooked through.
6.
Cook the spaghetti according to the instructions on the packet. Drain and put into a warm serving dish. Spoon the meatballs and sauce over the spaghetti and garnish with parsley.
