1 chicken
salt
freshly ground peppers
14 ozs Pearl onion
2 ozs Bacon (strips)
1 Tbsp butter
1 Tbsp olive oil
1 garlic clove
7 ozs Red wine (hearty style such as Cabernet)
7 ozs chicken stock
2 bay leaves
1 thyme
2 Sage
1 rosemary
5 ozs small Mushrooms (button or portabello)

Preparation steps

Rinse chicken, pat dry, cut into pieces and season with salt and pepper.

Peel onions. Heat olive oil and butter in a roasting pan or saucepan and fry chicken pieces and bacon strips until brown. Remove meat and set aside. Add onions to roasting pan. Peel garlic, cut into slices and sauté with onions. Pour in wine and chicken stock, then add herbs and chicken pieces and cook, covered, in a preheated oven at 400°F for 30 minutes. Add more liquid if necessary.

Rinse mushrooms and add to roasting pan. Cook everything, uncovered, for an additional 8-10 minutes in oven. Season with salt and pepper and serve with tagliatelle, if desired.

Could I use coconut oil instead of olive oil?

Yes, coconut oil will work fine as a substitute for olive oil. It has a slightly lower smoke point than olive oil, so watch your heat carefully.
