16 fresh mussels

1 onion
1 clove garlic cloves (small)
5 Tbsps butter
1 cup Red wine

2 bay leaves

1 Small pot, 1 Teaspoon, 1 Citrus juicer, 1 Large knife, 1 Cutting board, 1 Baking sheet, 1 Parchment paper, 1 Rubber spatula, 1 Wooden spoon

Preparation steps

Scrub the mussels and simmer gently in fish stock.

Peel and finely dice the onion and garlic. Heat 1 tsp butter and sweat the onion and garlic until soft. Add the herbs, wine and fish stock. Bring to the boil and simmer for at least 10 minutes. Add the eel fillets, baby squid and prawns and cook gently in the red wine stock for 5-7 minutes, until done.

Cut the butter into small pieces and add to the cooking liquid. Allow the butter to melt and season to taste with salt and pepper. Serve on plates with the mussels. Serve hot with white bread.
