800 grams lamb (trimmed, such as shoulder)
2 onions
2 garlic cloves
2 red Bell pepper
400 grams waxy potatoes
2 Tbsps olive oil
salt
freshly ground peppers
200 milliliters dry white wine
6 sprigs thyme

Preparation steps

Preheat a convection oven to 180°C (approximately 350°F).

Rinse the lamb, then pat dry. Cut into 2-3 cm (approximately 3/4-1 inch) cubes. Peel and chop the onions and garlic. Rinse, trim, and julienne the peppers. Peel the potatoes and cut into wedges.

Brown the lamb in a roasting pan with the oil. Add the onions and garlic, and sauté for 2-3 minutes. Mix in the peppers and potatoes, then deglaze with the wine. Season to taste with salt and pepper. Remove the leaves from 4-5 sprigs of thyme, and add to the lamb mixture. Cover and simmer for 1.5 hours in the oven, stirring occasionally. If necessary, add more wine.

Adjust the seasoning with salt and pepper if necessary. Add the remaining thyme to the lamb mixture, and serve.
