Braised Turkey Mediterranean Style

- 2 onions
- 1 garlic clove
- 600 grams turkey breasts (ready to cook, skinless)
- salt
- peppers (freshly ground)
- 250 grams Snow peas
- 3 Celery
- ½ bunch thyme
- 2 Tbsps vegetable oil
- 400 grams chopped Tomatoes (canned)
- 200 milliliters Chicken broth
- 100 milliliters Vegetable broth
- sweet ground paprika
- 400 grams Tagliatelle
Preparation steps
Peel the onions, cut into into halves and then slice into thin rings. Peel the garlic and chop finely.
Rinse the turkey breasts and pat dry, cut into bite-size pieces and season with salt and pepper. Rinse, trim and cut the snow peas diagonally into pieces. Rinse, trim and chop the celery. Rinse the thyme, shake dry, pluck off the leaves and chop finely.
Heat the oil in a saucepan and brown the turkey on both the sides. Remove and set aside. Saute the onion with the garlic in the same pan until translucent. Add in the snow peas and the celery and saute briefly. Add in the tomatoes, paprika and pour in the chicken broth. Season with salt and pepper, add the cooked turkey breasts and let simmer over medium heat for 15-20 minutes.
Stir in the thyme and season with pepper.
Cook the pappardelle pasta in boiling salted water until al dente. Remove the noodles from water and serve with the turkey breast stew in a preheated bowl. Garnish with thyme.
