3 slices stale white bread
1 l Beef broth

Preparation steps

1.

The garlic cloves, peel and finely chop.

2.

Rinse chives, shake dry and thinly slice.

3.

Tear the bread into small pieces.

4.

In a saucepan, bring the broth and garlic to a boil. Reduce to a simmer and season with nutmeg, salt and pepper to taste.

5.

Meanwhile, heat the butter in a skillet and saute the 4 eggs.

6.

Divide the white bread among warmed bowls and sprinkle with chives. Pour the hot broth over, top each with a fried egg, drizzle with olive oil to taste and serve immediately.
