- 3 cups skinless Icelandic Cod (cut into finger sized pieces)
- 2 cups fresh breadcrumbs
- 1 fresh parsley (or dill)
- 2 Tbsps Mayonnaise
- 3 Tbsps plain flour
- 2 eggs (beaten)
- 1 ⅔ cups frozen peas
Preparation steps

Heat the oven to 220C (200C in a fan), 425F, gas 7.
2.
Mix the breadcrumbs, parsley or dill and mayonnaise together in a bowl until combined.
3.
Place the breadcrumb mixture, flour and beaten egg in 3 separate shallow bowls.
4.
Coat each piece of fish first in the flour, then in the egg and finally, roll in the breadcrumbs.
5.
Place the fish fingers on a non-stick baking sheet and cook in the oven for 8-10 minutes until lightly golden and crisp.
6.
Serve the fish fingers with boiled peas, cooked according to pack instructions.
