600 grams fresh Broad bean (or more, if needed)
1 onion
3 garlic cloves
2 Tbsps olive oil
2 Tbsps white balsamic vinegar
½ lemon (juiced)
¼ bunch parsley (finely chopped)
cayenne pepper

Preparation steps

1.

Rinse the beans and the beans from the pods. Blanch the beans in boiling water for about 3 minutes. Then rinse with ice-cold water and place in a large bowl.

2.

Peel the onion and finely chop. Saute in a hot pan with olive oil.

3.

Peel the garlic cloves, press with a garlic press and add to the onions.

4.

Mix the beans and parsley with the lemon juice and vinegar, marinate, mix well and season with cayenne.

5.

Serve in small bowls with flatbread.
