- 4 Tbsps olive oil (divided)
- 2 medium shallots (sliced)
- 4 large garlic cloves (chopped)
- 16 ozs broccoli rabe (trimmed)
- 3 Tbsps Champagne vinegar
- kosher salt (to taste)
- freshly ground Black pepper (to taste)
- 4 poached eggs
Preparation steps

Heat 2 tablespoons oil in a large skillet over medium heat. Add the shallots and turn the heat to low. Saute shallots until beginning to caramelize, about 6 minutes. Add the garlic and continue to cook until shallots are caramelized and garlic is just slightly browned, about 1 minute longer.

Add the broccoli rabe to the skillet and turn heat to medium high, stirring constantly for about 3 minutes. Pour in the vinegar and continue to stir. Add the remaining olive oil, and season with salt and pepper. Continue to stir and cook until the broccoli rabe is wilted, about 3 minutes longer.

Remove from heat and divide between serving plates. Top each serving with poached eggs and serve.
