- 4 pcs Brown trout (or brook trout, each fillet about 6-8 oz)
- coarsely ground mixed peppers
- salt
- 8 small Figs
- 4 Tbsps olive oil
- 1 Tbsp honey
- lemons (juiced)
- Pastry flour (for coating)
Preparation steps

Season the fish fillets with salt and plenty of mixed pepper, pressing the pepper slightly to adhere. Rinse the figs, halve and briefly heat in 2 tablespoons olive oil, drizzle with honey and lemon juice and let cool.

Coat the fish fillets in a thin layer of flour and add to the remaining oil skin sides down. Cover and cook about 3-4 minutes over medium-low heat, turn over and cook briefly on the other side. Arrange the fish fillets with the figs on plates and serve.
