2 Bell pepper (Red and yellow)
1 carrot
2 Tomatoes
1 onion
1 garlic clove
4 Tbsps olive oil
1 Tbsp Tomato paste
100 milliliters dry white wine
salt

12 King prawn (ready to cook deveined and peeled)
2 Tbsps freshly chopped Basil
1 tsp lemon juice
1 Ciabatta

Preparation steps

Rinse bell peppers, trim and chop into small pieces. Peel the carrot and finely dice. Scald tomatoes, shock in cold water, peel, quarter, core and dice. Peel onion and garlic and finely chop. Sauté together with the bell peppers and carrot in 2 tablespoons of oil for 2-3 minutes. Stir in tomato paste and add the tomatoes. Deglaze with the wine and season with salt and pepper. Simmer until thickened, about 10 minutes, stirring occasionally.

Preheat oven broiler.

Rinse the prawns and pat dry. Season with salt and pepper. Add the remaining oil to a pan and cook until golden on both sides, about 4 minutes. Fold in basil and sprinkle with lemon juice.

Cut the ciabatta into 12 slices and brown on both sides under the oven broiler, watching carefully. Remove from oven and top with the tomato and vegetable mixture. Place the prawns on top and serve.
